    Excuse me, but real barbecue means low and slow - lower temperaturues and slower cooks. The tougher cuts of meat used in barbecue require longer cooking times in order to make them tender.

    What you are doing is grilling. Nothing wrong with that, if it works for you.

    i used to boil or other things to get the fall-off-the-bone tenderness, but if you pull off the membrane and cook ‘em slowly, for 3 to 4 hours in foil, the meat is damn tender!
