Thank you so much …
Thank you so much Manjula for your recipes and demonstrations. My husband and I LOVE Indian dishes and eat at our favorite Indian restaurants frequently. We’ve wanted to learn how to cook our favorite dishes but didn’t know where to start. We bought a cookbook but seeing it is so much better. No one in our area offers Indian cooking classes. Thank you!

Instead of using 2 …
Instead of using 2 Cups of sugar you can use dates. 5 dates:1 tamarind. This will make very good tamarind chutney ‘without’ sugar.

I cringed at the …
I cringed at the sight of it, too.
First of all it wont be consumed right away, it’s probably worth 30-40 servings.
So much of sugar is used because tamarind is too tangy, that’s the amount it will probably take to sweeten.
Second, you can use ’stevia’, best sweeteneer on earth. Plant based. Safe for diabetics, kids. It’s an herb. 8 times sweeter than sugar.
And of course, you can always use dates.

I love Imli Chutney! Thank you for posting the recipe. I have never made it where you take the tamarind pulp back out. Instead, it was made with tamarind paste concentrate. The paste dissolves in boiling water; but otherwise, it is very similar. Thank you again!
