    Chef,thanx for this wonderful recipe..I’ve been trying out most of your recipes and they have all been awesome..However, I had some questions in mind…Can I pre-make the powder and store it for subsequent use?As oil is added will the powder get rancid?Can I cook the stuffed eggplant in oven instead of stove top? I guess,this will alleviate my problem of having to turn the eggplant again and again and also cook it uniformly..I would appreciate if you could answer my queries…Thank you

    yes you can keep it for a long time , just roast them dry with out oil , and even with oil you can keep in fridge for a 3-4 months
