INGREDIENTS: About 8 plum tomatoes (remove the seeds and slice in half!) 1/4 cup olive oil 1 1/2 tablespoons balsamic vinegar 2 minced garlic cloves kalamata olives (as much as you like!) 2 teaspoons sugar Salt & Pepper Mozarella Cheese (I used buffalo mozarella) Basil (chopped into thin strips) DIRECTIONS: Preheat the oven to 350*. Arrange the tomatoes on a sheet pan, cut sides up. Drizzle with olive oil and the balsamic vinegar. Sprinkle with the garlic, sugar, and some salt & pepper. Roast for 1 1/2 hrs (2 hrs max) until the tomatoes are concentrated and begin to caramelize. Check on them to make sure they’re not getting burned or bubbling too much - if so, just turn the heat down! Allow the tomatoes to cool to room temperature. Layer the tomatoes w/ the mozzarella. Sprinkle some kalamata olives around the plate and than sprinkle w/ the basil. ENJOY
