Wrap the damp wood chips in a couple layers of heavy duty foil. Puncture holes on the top of the wood chip bundle to release the smoke. Set up a cold side and a hot side on your grill by placing all the charcoal in the corner of one side, or by lighting only a left or right burner. Latin American seafood dishes were the main topic of most of Chef Tony’s emails this past couple of weeks, so chef fired up his Cilantro Lime Shrimp to wet your appetite.
